Salted Dark Chocolate Ritz No-bake Cookies by BakingdomWell, this is probably a really silly confession to make, because it’s pretty obvious by how little I’ve been posting, but I’m going to confess it anyway:

I haven’t been in a very ‘blogging’ mood lately.

Actually, I think a more accurate confession would be that I have a tremendous case of writer’s block right now. Not baker’s block…I still have a kajillion recipes tripping and tumbling over themselves in my head – dancing around together, and chasing each other to the front of the line. Also, it’s not really a lack of motivation, as I have no less than four completed recipes photographed and uploaded and waiting to be shared. I just literally can’t think of much to write about these days.

And I know why, and it’s totally depressing, so if you don’t want to be sad, just skip ahead to the cookies…cookies are never sad.

The reason I think I have been having trouble getting my stories out is because I’m feeling so homesick. Let’s get some things straight…the Netherlands is amazing. I love it here. Europe is fantastic. We’ve been having an amazing time exploring. But let’s face it, it’s not home, and I miss home. I’ve never been homesick before, and I didn’t expect it this time around. With all of our moves, I felt pretty confident I could handle this one. I miss my friends and family tremendously, though, and it has made blogging a little harder to do.

I really debated sharing this with you. It’s not a fun thing to share, or to read, but I wanted to be honest with you all, and I wanted to thank you. Thank you so much, friends, for being patient and understanding. Thank you for hanging out, and for continuing to visit even when I haven’t had anything new to share for a while.

I’ve been obsessed with chocolate and Ritz crackers lately. Maybe the combo makes me feel a little less homesick…maybe it’s just really freaking delicious. Either way, it makes me happy, so I’m sharing a new sweet and salty cookie with you today. To say thanks. :)

Ritz No-bake Cookie Ingredients by BakingdomI love how easy, but still delicious, no-bake cookies are. They only have a few simple ingredients – butter, sugar, milk, cocoa powder, peanut butter, a little vanilla, oats, and crackers…and a little salt on top – and they take less than ten minutes to make…what’s not to love?

Dark Chocolate Ritz No-bake Cookies by BakingdomI love the great crunch that these crackers add to classic no-bake cookies. Plus, with a little extra cocoa powder, they have a rich chocolaty flavor that’s irresistible. These are less of a milk chocolate cookie, like traditional no-bakes, and darker and deeper in flavor.

Salted Ritz No-bake Cookies by BakingdomThen, there’s the salt on top. Seriously, don’t skip the salt on top. It’s the perfect accent to the crunchy crackers, and a great addition to the dark chocolate. You need to make these, and chances are, you already have all of the ingredients in your pantry!

Enjoy!

Salted Dark Chocolate Ritz No-bake Cookies
Makes about 2 dozen, depending on cookie size

Ingredients

1/2 cup (1 stick) unsalted butter or margarine
1 3/4 cups sugar
1/2 cup milk or soy milk
6 tablespoons cocoa powder
1/2 cup creamy peanut butter
1 teaspoon vanilla
1 1/2 cups quick oats
2 full sleeves Ritz crackers, roughly crushed
coarse sea salt

In a medium saucepan set over medium heat, melt the butter. Add the sugar, milk, and cocoa powder and stir to combine. Bring to a boil and cook for a minute to a minute and a half. Remove the pan from the heat and stir in the peanut butter and vanilla. Once the peanut butter is melted and combined, add the oats and crackers, mix well. Once combined, drop tablespoonfuls onto waxed or parchment paper, sprinkle with sea salt to taste, and allow to cool for at least an hour before serving.
