Strawberry Brownie Sundae Bites

Strawberry Brownie Sundae Bites from BakingdomDid you know that July is national ice cream month? It’s like the best idea for how to spend a month that anyone has ever thought of. Except maybe chocolate month. That’s awesome, too.

Strawberry Brownie Sundaes from BakingdomI decided that I wanted to celebrate with a little faux ice cream sundae. I made easy, fudgy mini brownies with waffle cone crusts and topped them with a scoop of strawberry buttercream in place of ice cream. Although, you could totally do for real ice cream if you wanted to. I even topped these little cuties with a bit of whipped cream and cherries.

Waffle Cone-crusted Brownie Sundae Bites from BakingdomThese crusts are super simple – a bit of crushed waffle cones, a smidgen of sugar, and a dab of butter – and give an amazing flavor and crunch to these tasty brownies.

Mini Strawberry Brownie Sundaes from BakingdomI used a whipped strawberry frosting on these, but I’ve also made them with real strawberry ice cream…along with a couple dozen other flavors, and everything has been deliciousness.

Strawberry Brownie Sundae Bites
Makes one 8×8-inch pan, or about 18 mini brownies

Ingredients

FOR THE CRUST
6 waffle cones, crushed
2 tablespoons granulated sugar
2 tablespoons unsalted butter, melted

One recipe Homemade Brownies
Half recipe Strawberry buttercream (omit rose water, if desired), or ice cream of your choice

Lightly spray an 8×8-inch pan (or a mini cheesecake pan or cupcake pan) with non-stick cooking spray; set aside.

To make the crust: Combine the crushed waffle cones, sugar, and butter. Press the mixture into the prepared pan. If making minis, press about one teaspoon of cone mixture into each cupcake cup.

Once the brownie batter is ready, pour it into the prepared pan (for minis, place about 1 1/2 tablespoons of batter in each cup). Bake as directed in the brownie recipe.

Allow to cool completely before topping with frosting or ice cream, and whipped cream (recipe below).

Homemade Whipped Cream

1 cup heavy cream
2 tablespoons sugar
1 teaspoon vanilla

To make the whipped cream: In a medium bowl, or the bowl of a standing mixer, whisk the cream and sugar together on high speed. Once peaks begin to form, add the vanilla and continue whisking until stiff peaks form.

Super Mario Bros. Mini Cakes

Super Mario Bros. Mini Cakes from BakingdomI made Super Mario Bros. cakes! I could probably just stop right there, say no more, and it doesn’t matter. Because Super Mario Bros. cakes.

These are kind of my Father’s Day tribute this year, because when I was a kid, we got the original Nintendo system when it first came out, and my dad absolutely loved to play Super Mario Bros. He totally beat the entire game before any of us kids did, and we were always Player Two to his Player One.

The original Nintendo system came out right around the same time my dad was first diagnosed with his illness, shortly before he was forced to retire early, due to medical reasons. Silly as it may sound, I have no doubt that he took comfort in losing himself in the running and jumping to rescue the princess. The repetitiveness, and maybe even monotony, was probably a great distraction from the fears that come tied to terminal illnesses.

I’ll always have happy memories of coming home from school and taking turns with my sisters to play Super Mario Bros. with my dad before he got too sick to spend as much time doing things like that. Back when dying in the game meant starting over again all the way from the beginning until you had every last coin, brick, power-up, and pipe memorized long before you finally finished the level, slid down the flagpole, and ran into the castle that waited.
